• Board at the stove must be sealed/constructed in such a way to make it smooth, easily cleanable, non-absorbent. Screws and braces must be easily cleanable.

Panda Express Restaurant, 27775 Highway 412 East

Priority violations:

• Employees washed hands when needed but did not lather hands long enough. Lather for 10-15 seconds before rinsing off soap.

• Teriyaki chicken at drive-thru was not at 135°F or above. Unit was not turned on. Corrected by turning unit on.

Nonpriority violations:

• Condensation leak in the walk-in freezer.

Priority violations:

• No sanitizer being dispensed into automatic dishwasher. Bucket was empty. Corrected.

• Not all food in the walk-in is 41°F or below. Repair person on location at the time of inspection.

• Dressing in salad cooler is not at 41°F or below. Monitor the salad cooler to ensure it is holding at 41°F or below.

• Demonstration of knowledge of food safety evident throughout the facility or by appropriate responses and actions.

• Items in walk-in not at 41°F or below. Items were leftover from previous night and possibly not cooled properly. Destroy as needed.

• Walk-in cooler is not holding food at 41°F or below. Unit is not working properly. Service call was made and food moved to an alternate cooler as needed.

• Not all items date marked as needed. (chili and beans)

• Using a cleaner/sanitizer product that is not labeled for retail of food service application.
