City Council met in regular session in the City Administration building with Mayor Clarence Spears presiding.

Councilman Hall introduced an ordinance entitled:

"An ordinance authorizing in time of emergency the Mayor impose a curfew, prohibiting the operation of businesses and other activities during curfew; providing penalties; declaring an emergency and for other purposes."

Pat Eurich knew what she was talking about when it came to cooking. Her mom and dad used to have a restaurant, so you could say she's been around food all her life.

Learning to cook was easy for Eurich, almost as easy as keeping her family happy with delicious meals. "She's a good cook," her oldest son emphasized. Her youngest son couldn't decide which of her dishes he liked best.

Three of Eurich's favorite casserole dishes are easy to fix and will please just about anyone in the family.

Enchilada Casserole

1 1/2 lbs. hamburger

1 cup chopped onions

1 1/2 tsp. cumin

2 garlic cloves, chopped

4 tsp. chili powder

1 1/2 tsp. salt

1/2 tsp. pepper

1 cup water

2 cups taco sauce

12 corn tortillas

1 lb. Monterey Jack cheese, grated

1 cup sour cream

Cook hamburger and onion, drain. Add next six ingredients and simmer uncovered for 10 minutes. Pour 1/2 cup taco sauce into greased 13x9-inch pan. Arrange half the tortillas in the pan. Pour 1/2 cup taco sauce and 1/2 lb. grated cheese over them, then cover that with half the meat mixture and half of the sour cream. Repeat layers and top with cheese. Cover with foil and bake at 375 degrees for 40 minutes. Remove foil and bake an additional five minutes. Serves 10.

Tater Tot Casserole

1 1/2 lb. hamburger

1 pkg. frozen tater tots

Salt and pepper

1/2 cup chopped onion

1 can cream of celery soup

Press hamburger into an 8x8x2-inch pan. Sprinkle with onion, add tater tots, sprinkle with salt and pepper. Pour soup over the top. Bake at 325 degrees for 1 hour and 30 minutes. Makes four to six servings.

The third casserole was Italian Sausage Supper.

The Siloam Springs Lady Panthers volleyball team hoped to claim its fifth state title since 2001 as they began their 2007 season at home against Fayetteville.

The 5-A West conference is fully loaded this year," said Head Coach Rose Cheek. "Any team can vie for the title and as many as three to four teams could play in the semi-finals."

The conference consisted of teams from Alma, Harrison, Greenwood, Morrilton, Vilonia, Little Rock Christian and Greenbrier.

The Lady Panthers were four-time state champions, winning in 2001, 2004, 2005 and 2006 -- taking the coveted title for the last three consecutive years.
